Spicy pea soup
Makes 3-4 portions
Peas are an excellent source of protein. This pea soup is nutritious and healthy, low in fat and high in protein and, best of all, easy to make! Ideal for a light filling lunch.
Ingredients
1 tbsp. extra virgin olive oil
1 large onion, chopped
2 cloves garlic, finely chopped
1 small potato, diced
1 inch fresh ginger
1 tsp ground cumin
1 tsp ground coriander
900ml vegetable stock
250g frozen peas
1 green chilli (optional)
Coriander leaves to garnish

Method
- Heat oil in pan and fry onions and garlic for 5 mins until soft and golden
- Add potatoes, ginger, cumin and coriander and stir well. Cook for a few minutes, stirring to make sure potatoes are coated in spices
- Pour in stock and bring to boil, simmer gently for 15 minutes
- Add peas and chilli, season and cook for 5 minutes on low heat
- Remove from heat and blend until smooth
- Enjoy!
